Back when my boys were much, much younger, life was a little leaner.
 
We were a young family out in the country, miles from convenience, and most days we simply used what we had on hand. Some people call that “character-building.” I think it was just living.
 
When the nearest corner store is a good lo-o-o-ong drive (and you can’t just nip out for one missing thing), you learn to love recipes that are expandable, flexible, and every other “-ible” you can think of.
