Obatzda (oh-BAHTS-dah) Literally “the mashed-together one” From Bavarian obatzn, meaning to press or mash together. Today, obatzda is a Bavarian cheese spread made by mashing soft cheese with butter, spices, and a little something spirited if you’re feeling traditional. It became especially well known in Bavaria in the 1920s, when Katharina Eisenreich served it at the Weihenstephan Bräustüberl in Freising. Very Bavarian, and very good with pretzels nearby.
